Recipe: Apple Cottage Cheese Pancakes

Sounds weird, yes. But, the ingredients are all good for you things, and very tasty. I got this off the ‘Net, but changed it up a bit because the original was a bit dry.

Ingredients (yields about 8 pancakes)

  • 4 eggs separated (I put the yolks and egg whites into seperate bowls)
  • 1 cup cottage cheese (used 1% because that’s all I had. It worked 🙂
  • 1 grated apple (peel and grate with a cheese grater. First time I ever did this, no lie. It worked out great)
  • 1 cup whole wheat flour
  • 1 tsp lemon juice
  • 3 tbsp brown sugar
  • 1/2 tsp to 1 tsp cinnamon
  • 1/2 tsp salt
  • 3 Tbsp finely minced walnuts (optional)
  • 1 tsp canola oil (gotta get those essential oils in)

Step-By-Step Directions:

1. In a large bowl, mix cottage cheese, egg yolks, apple, flour, walnuts, lemon juice, oil, brown sugar, cinnamon and salt until well combined.
2. In another bowl, beat egg whites until stiff and form peaks.
3. Fold the egg whites into the apple mixture.

Looks kind of like meatloaf, no? Pancakes!

4. In a large hot and greased skillet, drop batter into pancake forms. Smooth out the batter with the back of a spoon to flatten them a little. I used about 1/4 cup of the mixture for each pancake.

A little cooking spray goes a long way

5. Cook until firm and golden brown on both sides.

Ready to rock and roll

It’s great for a healthy way to start the day. Top with maple syrup, honey, or whatever you like.
