Breakfast… to eat or not to eat? (recipe inside)

Studies show that eating a good breakfast will get your body in great shape to take on the day. But what is a good breakfast these days? A lot of folks grab a doughnut and a coffee and head out the door. However, if you have some time to really get a good one that’s high in protein and fiber and includes good fats to get the metabolism rolling.

Jen’s Ultimate Breakfast Scramble

Ingredients:

  • 2 eggs – if you don’t want to deal with the yolks, use egg whites or egg substitute. Entirely up to your tastes.
  • 2 slices turkey bacon
  • chopped spinach (I like it fresh)
  • chopped tomato
  • chopped mushrooms
  • chives
  • cooking spray or oil – olive and canola are good essential oils
  • slice of cheese

Directions:

  1. Heat up oil or spray in frying pan. Add chopped up turkey bacon and mushrooms and let cook for a couple minutes.
  2. Add in chopped spinach and chives, and let wilt. Season with salt and pepper to your taste.
  3. Add in tomato first, stir up, then the eggs. Let it cook away until done.
  4. Top with a slice of cheese (I like 2% cheddar) and you’re ready to rock and roll. Salsa is a good addition too, if you’re in the mood.

There you have it… protein, fiber from the vegetables, and calcium from the cheese. Major food groups represent πŸ™‚
